- Potassium Metabisulfite is a white powder with a sulphurous odour. It's used in winemaking as an antioxidant, sterilant, and preservative. To make 6 gallons of wine, add 1/4 tsp to 1/2 cup of water and potassium sorbate. It also serves as a preservative, keeping food's colour and fighting bacteria. With formula K2S2O5, a molar mass of 222.32 g/mol, a density of 2.34 g/cm³, and a melting point of 190°C, it's used along with sodium metabisulfite, potassium bisulphite, and potassium sulphite. To sterilize equipment, add 8 tsp to 1 gallon of water and rinse for 5 minutes. To sterilize bottles, add 2 tsp and 1 tbsp of citric acid to 1 gallon of water and rinse.
